Smoky Chorizo & Prawn Rice

Who’s keen to try this Smoky Chorizo and Prawn Rice?

INGREDIENTS

  • Ocean Chef Australian Caught Raw Peeled Banana Prawns - 250g
  • Chorizo (Chopped) - 80g
  • Garlic (Minced) - 2-3 cloves
  • Olive Oil
  • Hot Smoked Paprika - 1/2 - 1 tsp
  • Large Roasted Red Capsicum (cut into strips) - 2
  • Broccoli - 100g
  • Basmati Rice - 250g
  • Fresh Chicken Stock - 500mL
  • Frozen Peas - 30g

INSTRUCTIONS

  1. For Prawns – preheat a non-stick fry pan to a medium heat, adding 5mL olive oil.
  2. Place prawns in pan and cook for 5 – 7 minutes turning occasionally. Ensure Prawns are piping hot in centre.
  3. In a medium pan add the chorizo and fry for 3-5 mins or until ‘smoky’.
  4. Stir in oil, garlic and paprika.
  5. Add roasted capsicum and broccoli and fry for 5 mins.
  6. Add the rice and stir to coat. Add the stock, cover with a lid and let simmer for 10 mins.
  7. Stir in the peas and Ocean Chef Raw Prawns. Replace the lid and simmer for 2-3 minutes.
  8. Plate, serve and enjoy!
