Salmon with Garlic Potatoes & Asparagus
Here’s a welcome winter warmer recipe. Baked Ocean Chef Salmon with garlic potatoes and asparagus. Yum!
INGREDIENTS
- Ocean Chef Atlantic Salmon Portions
- Potatoes
- Fresh Garlic
- Salt & Pepper
- Olive Oil
- Chopped Parsley
- Asparagus
- Lemon Juice
- Butter
INSTRUCTIONS
- Chop washed potatoes into wedges.
- Place wedges in a bowl, add chopped fresh garlic, salt & pepper, olive oil and mix thoroughly, coating wedges evenly.
- Line baking tray with baking paper and bake potato wedges at 200°C for approximately 20 minutes.
- Remove tray from oven, add salmon portions and asparagus to the tray.
- Season salmon portions with fresh garlic and chopped parsley.
- Drizzle lemon juice and melted butter and bake for a further 10-15 minutes at 200°C.
- Plate, serve and enjoy!
