Salmon with Garlic Potatoes & Asparagus

Here’s a welcome winter warmer recipe. Baked Ocean Chef Salmon with garlic potatoes and asparagus. Yum!

INGREDIENTS

  • Ocean Chef Atlantic Salmon Portions
  • Potatoes
  • Fresh Garlic
  • Salt & Pepper
  • Olive Oil
  • Chopped Parsley
  • Asparagus
  • Lemon Juice
  • Butter

INSTRUCTIONS

  1. Chop washed potatoes into wedges.
  2. Place wedges in a bowl, add chopped fresh garlic, salt & pepper, olive oil and mix thoroughly, coating wedges evenly.
  3. Line baking tray with baking paper and bake potato wedges at 200°C for approximately 20 minutes.
  4. Remove tray from oven, add salmon portions and asparagus to the tray.
  5. Season salmon portions with fresh garlic and chopped parsley.
  6. Drizzle lemon juice and melted butter and bake for a further 10-15 minutes at 200°C.
  7. Plate, serve and enjoy!
