Mediterranean Salmon

This salmon recipe is simple, delicious and all cooked in a single pan! (We love not having much to wash up)

INGREDIENTS

  • Ocean Chef Salmon Portions Mediterranean Style
  • Olive Oil
  • Lemon Juice
  • Broccoli
  • Solanato Tomatoes
  • Chilli Flakes
  • Oregano
  • Crushed Garlic
  • Lemon Zest
  • White Wine
  • Kalamata Olives
  • Salt & Pepper

INSTRUCTIONS

  1. Preheat a non-stick fry pan to a medium heat, adding 5mL olive oil, if desired.
  2. Remove thawed salmon portions from packaging and cook for 3 – 4 minutes turning occasionally and add lemon juice. Ensure salmon is cooked all the way through or until piping hot in centre.
  3. Remove cooked salmon portions from pan to rest.
  4. In the same pan, add olive oil and broccoli and stir fry.
  5. Add solanato tomatoes, chilli flakes, oregano, crushed garlic, lemon zest, white wine, kalamata olives and continue to stir fry.
  6. Add in the cooked salmon portions and season with salt & pepper.
  7. Plate, serve and enjoy!
