Mediterranean Salmon
This salmon recipe is simple, delicious and all cooked in a single pan! (We love not having much to wash up)
INGREDIENTS
- Ocean Chef Salmon Portions Mediterranean Style
- Olive Oil
- Lemon Juice
- Broccoli
- Solanato Tomatoes
- Chilli Flakes
- Oregano
- Crushed Garlic
- Lemon Zest
- White Wine
- Kalamata Olives
- Salt & Pepper
INSTRUCTIONS
- Preheat a non-stick fry pan to a medium heat, adding 5mL olive oil, if desired.
- Remove thawed salmon portions from packaging and cook for 3 – 4 minutes turning occasionally and add lemon juice. Ensure salmon is cooked all the way through or until piping hot in centre.
- Remove cooked salmon portions from pan to rest.
- In the same pan, add olive oil and broccoli and stir fry.
- Add solanato tomatoes, chilli flakes, oregano, crushed garlic, lemon zest, white wine, kalamata olives and continue to stir fry.
- Add in the cooked salmon portions and season with salt & pepper.
- Plate, serve and enjoy!
