Salmon Portions with Rainbow Veggies

Here’s a fun recipe to cook with the kids! Make a rainbow of veggies along with your baked salmon. Paired with the home-made marinade, this simple and delicious dinner is sure to become a family favourite!

INGREDIENTS

  • Ocean Chef Atlantic Salmon Portions
  • Red Onion
  • Broccoli
  • Yellow Squash
  • Grape Tomatoes
  • Salt
  • Black Pepper
  • Olive Oil - 2 Tbs
  • Lemon Juice - 2 tsp
  • Minced Garlic - 3 cloves
  • Dijon Mustard - 1 Tbs
  • Honey - 1 tsp

INSTRUCTIONS

  1. Roughly chop red onions, broccoli and yellow squash into bite-sized pieces
  2. Line baking tray with baking paper and spread chopped vegetables on tray
  3. Bake in oven at 200°C for 10 – 15 mins
  4. Remove tray from oven
  5. Take out Ocean Chef Atlantic Salmon portions from packaging and place them on the tray with the other vegetables
  6. Place grape tomatoes on baking tray
  7. Season with salt and black pepper
    (For the sauce)
  8. In a small bowl add 2 Tbs olive oil, 2 tsp lemon juice, 3 cloves minced garlic, 1 Tbs dijon mustard, 1 tsp honey
  9. Mix thoroughly
  10. Coat/brush salmon portions with sauce
  11. Bake in oven at 200°C for another 12 – 15 mins
  12. Serve and enjoy!

The oily, orange flesh holds together well and provides a good source of both protein and omega 3 fatty acids. To fully appreciate the distinctive flavour, pair salmon with a simple combination of olive oil and lemon, or for something more exotic, Asian flavours such as ginger and lemongrass.
