Salmon Portions with Rainbow Veggies
Here’s a fun recipe to cook with the kids! Make a rainbow of veggies along with your baked salmon. Paired with the home-made marinade, this simple and delicious dinner is sure to become a family favourite!
INGREDIENTS
- Ocean Chef Atlantic Salmon Portions
- Red Onion
- Broccoli
- Yellow Squash
- Grape Tomatoes
- Salt
- Black Pepper
- Olive Oil - 2 Tbs
- Lemon Juice - 2 tsp
- Minced Garlic - 3 cloves
- Dijon Mustard - 1 Tbs
- Honey - 1 tsp
INSTRUCTIONS
- Roughly chop red onions, broccoli and yellow squash into bite-sized pieces
- Line baking tray with baking paper and spread chopped vegetables on tray
- Bake in oven at 200°C for 10 – 15 mins
- Remove tray from oven
- Take out Ocean Chef Atlantic Salmon portions from packaging and place them on the tray with the other vegetables
- Place grape tomatoes on baking tray
- Season with salt and black pepper
(For the sauce) - In a small bowl add 2 Tbs olive oil, 2 tsp lemon juice, 3 cloves minced garlic, 1 Tbs dijon mustard, 1 tsp honey
- Mix thoroughly
- Coat/brush salmon portions with sauce
- Bake in oven at 200°C for another 12 – 15 mins
- Serve and enjoy!
