Honey Soy Garlic Salmon with Mashed Potatoes
A timeless marinade featuring honey, soy sauce, lemon, and garlic—perfectly complementing our Ocean Chef Salmon Fillets.
INGREDIENTS
- 2 Ocean Chef Salmon Fillets
- 1Tbsp Butter
- 1 Tbsp Oil
- 2 Tbsp Honey
- 1/2 Lemon, Juiced
- 1/4 Cup Soy Sauce
- 2 Garlic Cloves, Minced
- 1 Bunch Asparagus
- 4 Potatoes, Peeled, diced
- 1 Tbsp Butter
- 1/4 Cup Milk
- 1 Tsp Dried Parsley
INSTRUCTIONS
- To make the sauce, add half the minced garlic, soy sauce, honey and lemon juice. Whisk to combine, then set aside.
- Before frying the salmon, season with salt and pepper. Then sear skin side down in a pan with butter and oil on medium high heat. Once the salmon is golden, remove from pan.
- To the same pan, add the remaning garlic and stir until fragrant. Add the asparagus, season with salt and pepper, cook for an additional 2-5 miutes, until the asparagus turns a deep green. Remove form pan.
- Immediately add in the honey soy mixture, and simmer for 4-5 minutes or until the sauce has reduced in size.Return the salmon fillets back into the pan to coat, then simmer for a further 2 minutes.
- Serve on a plate with a side of mashed potatoes, asparagus and top with a few spoonfuls of sauce.
