Smoky Chorizo & Prawn Rice

INGREDIENTS
- Ocean Chef Australian Caught Raw Peeled Banana Prawns - 250g
- Chorizo (Chopped) - 80g
- Garlic (Minced) - 2-3 cloves
- Olive Oil
- Hot Smoked Paprika - 1/2 - 1 tsp
- Large Roasted Red Capsicum (cut into strips) - 2
- Broccoli - 100g
- Basmati Rice - 250g
- Fresh Chicken Stock - 500mL
- Frozen Peas - 30g
INSTRUCTIONS
- For Prawns – preheat a non-stick fry pan to a medium heat, adding 5mL olive oil.
- Place prawns in pan and cook for 5 – 7 minutes turning occasionally. Ensure Prawns are piping hot in centre.
- In a medium pan add the chorizo and fry for 3-5 mins or until ‘smoky’.
- Stir in oil, garlic and paprika.
- Add roasted capsicum and broccoli and fry for 5 mins.
- Add the rice and stir to coat. Add the stock, cover with a lid and let simmer for 10 mins.
- Stir in the peas and Ocean Chef Raw Prawns. Replace the lid and simmer for 2-3 minutes.
- Plate, serve and enjoy!
