Citrus Scallops with Rice

Scallops are easier to cook than you think! Check out what we whipped up with our Ocean Chef scallops!

INGREDIENTS

  • 150g Ocean Chef Scallops
  • 1 Tbsp Olive Oil
  • 1Tbsp Butter
  • 1 Asparagus Bunch, chopped
  • 2 Cloves Garlic, minced
  • 1/2 Shallot, diced
  • 1/2 Orange, zested & juiced
  • 1 Tbsp Lime Jiuce
  • Handful Parsley, finely chopped
  • 1/2 Tsp Salt & Pepper
  • 1 Tsp Chilli Flakes
  • More parsley to garnish
  • Rice to serve

INSTRUCTIONS

  1. In a bowl, add your sauce ingredients, whisk to combine and set aside.
  2. In a stainless steel pan, heat 1 tablespoon of oil and butter. Whilst the oil is heating up, season your scallops on both sides with salt & pepper.
  3. When heated, add your scallops and sear on medium high heat. Flip when the scallop naturally lifts off the pan without resistance. Continue to sear the other side for an additional 1-2 minutes, set aside to cool slightly.
  4. In the same pan, add your asparagus and toss to cook. Add a little bit of cold water, this will help steam and cook the aspragus quickly.
  5. To serve, top the scallops and asparagus onto a bowl of rice, then spoon the sauce on the scallops.
